The "Calçotada" is a typical gastronomic festival of the western region of Catalonia (Spain) that is celebrated in late winter and early spring. The calçots (spring onion) are especially cultivated for this feast and are roasted directly over the flames and are eaten by hand sipped un a special seasoned sauce called la salvitxada. Los calçots are also accompanied with typical roasted meats and sausages for the main course.
